Happy Birthday Elaine
Yesterday was a day of celebration for our friend, Elaine. Yesterday, July 17th was Elaine's 90th birthday and we celebrated by taking her to her favorite restaurant in the town where she grew up, LaGrange, IL. As we sat down and began to look at the menu, I asked Elaine what her favorite meal was and she replied, "the Eggplant Parmesan, the only thing I ever order." Well, not being a fan of eggplant parmesan I ordered the special which was ravioli stuffed with artichokes and cheeses with a tomato based creamy sauce. Mine was delicious, but as we traveled home, Elaine said hers was not the eggplant parmesan she remembered from the past...."too mushy" she remarked. But despite the mushy eggplant parmesan, she had a wonderful time and so appreciated that our Wednesday morning group has welcomed and embraced her. She is a gem. I truly hope that when/if I reach the golden age of 90 that I have friends both young and old to celebrate this milestone with. We are blessed to know her.
